The many varieties of Girona cheese are the perfect accompaniment for tomato-rubbed bread. Try the mild pell florida (grey velvety rind) cheese of Garrotxa, or the stronger and more tangy tupí, typical of the Catalan Pyrenees. Other varieties include the costa negra, also from the Pyrenees but milder and creamier, or the recuit de drap from Empordà, a kind of cottage cheese. Whichever you choose, you can't go wrong.
