Sweet botifarra

Sweet botifarra (Catalan sausage) is traditionally a winter product but is increasingly being eaten all year round, which is no bad thing! The recipe is straightforward: lean pork, sugar, lemon zest, salt and cinnamon (optional). Although it tastes great raw, it’s normally eaten cooked, whether stewed with apple, char-grilled or fried.
